GG Kitchen: Mother of all Mac 'n' Cheeze

OMG YOU GUYS.

Okay so I'm going to share what is probably my FAVOURITE recipe of the moment, and that's VEGAN MACARONI AND CHEEZE. I honestly searched the internet for a vegan macaroni and cheeze recipe that was obviously dairy free, but also low fat and didn't contain any nuts/oils/avo. Most creamy vegan recipes are loaded with either cashew nuts (to make a creamy cashew sauce) OR are super oily. Given my current acne situation I avoid cooking with any added fats at home, so it was time to get creative in the kitchen.

I am a failure when it comes to cooking so you can rest assured this is so super easy and doesn't take a team of Jamie Olivers to prepare. YES, it is possible to make low fat, vegan macaroni cheeze!

(This is for one serving, by the way. Most of my recipes are since I only cook for myself!)

INGREDIENTS:

3-4 small/medium potatoes or 2 large potatoes

1/4 cup nutritional yeast flakes (I LOVE BRAGGS!)

2 tbsp lemon juice

1/2 tsp onion powder

1/2 tsp garlic powder

Pinch himalayan pink salt (optional)

As much water as required (you will need a fair bit!)

Your choice of macaroni pasta (I just used wheat pasta but brown rice macaroni is also good!)

-Peel and throw your potatoes in the microwave on a sheet of paper towel and cook on high for 5 minutes

-Turn the potatoes and cook for another 5 minutes on high

-Allow to cool completely before blending

-Bring a pot of water to the boil and add your choice of pasta

-In a nutribullet or high power blender, place cold potatoes, water, yeast, powders and salt

-Blend until super smooth (may have to stir it around, add water, and blend again)

-Sauce should be silky and almost slimey looking, not thick like mashed potatoes

-Add more yeast if its not 'cheesy' enough

-Remove pasta from pot once cooked. Stir sauce through the pasta and add whatever veggies you like!

**Or if you're in a comfort food kinda mood, skip the veggies. No time for that shit.
