
So I have been super duper sick all week (YES! Vegans get sick, shhh) and yesterday I was practically in bed-bound mode. If you caught my instagram, you already know what's coming! I went into major pancake feast mode and literally made about 10 pancakes and ATE THEM ALL. Of course I photographed four of them, just so they look aesthetically normal of course. #socialmediaisnotreallife lolz.
Sooo I figured I owed it to the world to show you how to make oil free, low fat, gluten free, vegan pancakes that are honestly killer. SO GOOD!
[Ingredients]
>>2 cups organic buckwheat flour
>>1 cup Oat milk (I use Vitasoy Bone Essentials, no oil)
>>1 mashed banana
>>2 tsp organic vanilla extract
>>1 tsp baking powder
[Method]
Combine all ingredients in a bowl and whisk together until a smooth batter is formed
Add more liquid/flour as necessary
In a non stick pan on low heat pour a small amount of the mixture (or as desired) and cook until small bubbles begin to appear on the surface
Flip and cook the other side for a few minutes
Continue with the rest of the batter

And there you go! If you're not a fan of banana, they are a little bit banana-y, so you could substitute the mashed banana easily with some apple sauce or something else that'll act as a sticky binder instead of egg. Egg is gross.
I topped my pancakes with some berries that I microwaved with agave syrup to make a sauce, but you can totally use whatever you like!
A tip is also to invest in a really good non-stick frying pan-- that way you don't have to use oil to grease the pan :)
