[GG Kitchen] Cinnamon Banana French Toast

Yusss this is exactly what I want as the weather's getting cooler. Since I'm from Melbourne, we're saying goodbye to the sun and heading into Autumn/Fall, so I'm hauling out my warm wool-free jumpers and seeking some warmer food too! The bulk of my diet usually consists of fruit, as it makes me feel light and fresh (all the while being 100% satisfied) and energised given that my career revolves around being fit and active. Though French Toast is a classic breakfast food, I actually ate this in the afternoon after I'd finished all my physical activity for the day (an hour and a half of training plus teaching a 45 minute Body Attack Class) because I was STARVING and I'd had a smoothie quickly to replenish glucose stores, but needed something a little more.

This recipe is of course, #fullyvegan, but it is also oil and fat free. All of the recipes I'll be posting are oil and fat free so they can therefore be acne-friendly-- by that I mean they WON'T give you acne!!

This is a sweet version of french toast, and it's very banana-y. If banana ain't yo thang, you probabbbblllyy won't like this one, sorry!!

[Ingredients]

>> 2 ripe bananas

>> 4 thick slices of rustic rye sourdough (if you're feeling faanncccyy)

>> 2 tsp organic vanilla

>> Sprinkle of cinnamon

>> Splash oil free oat milk

>>Maple syrup to serve

[Method]

Mash up the 2 bananas with a fork until relatively smooth, add as much oat milk as required to get a batter-like consistency

Add the cinnamon and vanilla

Place one slice of the bread in the mixture, turn to coat both sides in the banana mix

In a non stick fry pan on low (that way you don't use oil!) place the coated bread slice and cook for 2-3 minutes on each side

Continue with the rest of the bread!

Drizzle with maple syrup coz that makes it amazing <3

YUMMMM!

I really can't tell if mine looks terrible or not... It tasted incredible! Maybe I won't use such a difficult type of bread next time... sliced bread would probably be easier to work with, however most conventional block loaves contain oil and a lot of nasty preservatives, whereas this bread from the bakery contains none of that!
