
Easy like a Sunday morning
PANCAKES PANCAKES PANCAKES
Does anyone else just find it so incredibly rewarding to have woken up, prepped the kitchen, pulled ingredients from the pantry, and cultivated a warm and somewhat fancy breakfast in the morning??
Brunch is well-loved for a reason. It's no trip to space, but a warm breakfast takes a little more time and effort than cereal and almond milk. These taste sooo warm and loving though, and best thing about breakfast at home is you can enjoy it with sleepy eyes and warm robe.
These pancakes are gluten free and vegan and contain no oil (which can easily be achieved with a non stick frying pan) and can be varied in many many ways. Today I'll share with you the basic batter recipe, and maybe in a week or two I'll do a complete post of variations hey?
And yes you'll find more than 3 ingredients below, however the basic batter is simply the flour, milk and the banana, I just added a few extras to make them extra yummy.


Ingredients:
1 cup brown rice flour
1 cup buckwheat flour
1 1/2 cups soy/almond/rice milk (I used bonsoy)
1 1/2 ripe banana
Vanilla extract
Dash cinnamon
Other awesome additions:
Blueberries
Vegan chocolate chips
Maple syrup
Lemon
x Place all ingredients in a large blender, wet ingredients first
x Blend high, then to low until batter is smooth and lump free
x Add more milk if the batter is too dry
x Pour into large non stick frying pan on low heat
x When bubbles begin to form in the centre of the pancake use a spatula or pancake flipper to flip the pancake (obviously)
x Cook on the other side for another 30 sec or until the batter is no longer runny when pressed
x Transfer to a plate and top with whatever you like!


I'll be real, I'm probably not the best blogger, but I hope this page turns into a library of really awesome whole food plant based recipes. If you guys didn't already know, I very tightly adhere to a whole food plant based diet-- no oil, high in wholegrains with fruits vegetables and legumes. It makes me feel my fittest, gives me the most energy and the most clarity. I really love eating this way and even if you don't, increasing your intake of plant foods and minimising your intake of animal products is beneficial to absolutely everybody.
