Holy COW! Vegan Banana Ice-cream

With summer on it's way, an amazing ice cream minus the moo juice isn't just freakin awesome... it's absolutely essential! I'm actually not the biggest banana fan generally, like I really won't eat them whole very often but THIS is a game changer. A banana changer.

Don't get me wrong, bananas are a rad fruit, and yes there are some revolutionary vegan ice-creams on the market out there, but if you're trying to keep it low fat like me the struggle can be real when it comes to the creamy frozen stuff. So friends, I present you with the HCLF Summer Mascot: here is how to make a wicked, whippy, soft serve quality banana ice cream.

INGREDIENTS (YES this is all it is!)

-6 frozen bananas chopped up

-Splash water

-3 tbsp coconut sugar/maple syrup/agave nectar (whatever sweetener you like, I used jam yesterday woops)

-1 tbsp vanilla extract

-Medjool dates optional (if you want a chewy caramel flavour)

In a food processor, blend all ingredients (except vanilla and sugar) on LOW first to break up the banana.

Go nuts and switch to HIGH

Please don't break your motor, your processor may not be as strong as mine, take it slow if that's what he/she wants

Blend until it becomes really whippy and looks like whipped cream

If some sticks to the lid, toss it back in and keep going

Add vanilla and sweetener of choice

Blend for another minute or two

BANG! DONE! Vanillery creamy frozen whip :P
